Gallo Pinto (Costa Rican Beans and Rice)

Ingredients


  • 1 15oz can of Black Beans

  • 2 cups of Basmati Rice (brown or white)

  • 1 Onion

  • 1 Tbsp Olive Oil

  • 1 Clove of Garlic

  • 1 Red Bell Pepper or 5 Small Sweet Peppers

  • 1/2 cups of Salsa Lizano or Vegan Worcestershire Sauce

  • Cilantro to taste










Instructions


  1. Cook rice according to instructions on bag or box

  2. Dice onion, peppers (bell or sweet), and garlic.

  3. Heat olive oil on medium heat in pan.

  4. Add diced vegetables and cook until onions are translucent.

  5. Drain and rinse beans, then add to pan.

  6. Stir in your Salsa Lizano or Worcestershire sauce if using instead.

    (you can always add more if you find it too dry.

  7. Simmer for 2 minutes

  8. Stir in rice until fully combined

  9. Top with cilantro and your favorite hot sauce!
