These are quite simply the fluffiest pancakes ever. They are easy to make and so very delicious, did I mention guilt free. Treat yourself or your family and friends to a stack of unforgettable pancakes. Top with your favorite topping such as banana's, strawberries, blueberries, or just about anything your heart desires!
Time: 30mins
Serving: 7-8 pancakes
Ingredients
2 cups All purpose flour
3-4 Tbsp Organic Sugar
2 Tbsp Baking Powder
1 tsp Salt
2 Cups Non Dairy Milk
2 Tbsp Apple Cider Vinegar
2 tsp vanilla extract
Directions:
Mix wet ingredients (Milk, Apple Cider Vinegar and Vanilla Extract) in small mixing bowl. Stir and let sit for 5 minutes
Mix all dry ingredients in a larger separate bowl (Flour, Sugar, Baking Powder and Salt)
After 5 minutes of letting milk combination rest, pour wet ingredients into dry ingredients and mix until just combined. Don't over do it. Let batter rest for an additional 6-8 minutes to allow it to rise.
Heat a nonstick pan over medium low heat.
Use a 1/2 cup measuring spoon to scoop out batter onto pan.
Let cook until bubbles start to pop on top of the pancake.
Flip pancake over and cook until golden brown.
Top with favorite ingredients and enjoy!
