Iced Pumpkin Cookies
Ingredients:
⅓ Cup Vegan Butter (Unsalted)
2 tablespoons Almond Butter
¾ cup Sugar
¼ cup Brown Sugar
⅓ cup Pumpkin Puree
1 ½ cup All-Purpose Flour
¼ teaspoon Salt
¼ teaspoon Baking Soda
¼ teaspoon Baking Powder
1 ½ teaspoon Cinnamon
½ teaspoon Pumpkin Pie Spices
½ teaspoon Fresh Ginger
Directions:
In a large bowl mix melted vegan butter, almond butter, sugar, brown sugar, and pumpkin puree until fully mixed.
Add the rest of your ingredients and stir until dough forms. It will be easier to use your hands to from the dough.
Cover the bowl and chill the for
30 minutes, do not skip this step.
Remove the dough from the fridge and preheat the oven to 350°F (180°C).
Line a cookie sheet with parchment paper
Using hands, roll into 1 1/2 inch dough balls, the batter should make around 20.
Place on pan about two inches apart, and gently flatten the dough ball.
Place in oven for 14 minutes.
Let cool before adding icing.
